Cognac, orange liqueur and lemon — a Prohibition-era classic that still holds up.

From the shelf: Hine Cognac

Ingredients
  • 2oz Hine Cognac
  • 1oz Cointreau or triple sec
  • ¾oz fresh lemon juice
  • Sugar, for the rim (optional)
Method
  1. If using, rim a coupe glass with sugar.
  2. Add the cognac, Cointreau and lemon juice to a shaker with ice.
  3. Shake hard for 10–15 seconds.
  4. Double strain into the glass.

From the shelf: Hine Cognac and Bols Cacao Brown

Ingredients
  • 1oz Hine Cognac
  • 1oz Bols Cacao Brown
  • 1oz fresh cream
  • Grated nutmeg, to garnish
Method
  1. Add all ingredients to a shaker with ice.
  2. Shake hard for 10–15 seconds until well chilled.
  3. Double strain into a chilled coupe glass.
  4. Grate fresh nutmeg over the top.
